Why High-Temperature Cooking Sabotages Mitochondrial Health: AGEs and What They Mean for Your Body

Have you ever noticed how a perfectly browned steak, with that golden, crispy crust, smells incredible? That appetizing appearance and taste are the result of a chemical reaction called the Maillard reaction. Unfortunately, what makes food delicious can, at the same time, burden your body with harmful compounds called Advanced Glycation End-products (AGEs).

And for mitochondria – the tiny powerhouses within each cell – AGEs are like throwing sand into the gears of a finely tuned mechanism.

 What are AGEs?

AGEs (Advanced Glycation End-products) form when sugars react non-enzymatically with proteins or fats – a process known as the Maillard reaction. This is accelerated by high-temperature and dry cooking methods: grilling, air frying,  frying, intense baking, oven browning.

AGEs are sticky, oxidized molecules that accumulate in tissues and blood, interfering with cellular structure and signaling. Although they provide taste and color to foods, they generate a major oxidative and inflammatory burden for the body.

The Impact of AGEs on Mitochondria

Mitochondria are not mere observers in the presence of AGEs – they are the first victims:

●     Oxidative stress: AGEs interact with their receptors (RAGE), activating inflammatory pathways (NF-κB) and generating excess ROS (reactive oxygen species).

●     Mitochondrial dysfunction: Glycation affects mitochondrial enzymes (e.g., complex I, ATP synthase), decreasing energy production (ATP).

●     Membrane stiffening: AGEs form abnormal rigid cross-links between lipids, hindering electron transfer in mitochondria.

●     Systemic inflammation: RAGE activates inflammatory cytokines, creating a vicious cycle between mitochondrial stress and chronic inflammation.

AGEs turn inadequate cooking into an accelerating factor for aging, mitochondrial dysfunction, and chronic diseases.

 Why the Cooking Method Matters

The same food can be healing or harmful, depending on how it's prepared:

●      Dry, high-temperature methods (grilling, air frying, frying, intense baking): massively increase AGE formation.

●      Moist, gentle methods (soups, stews, poaching, steaming): drastically reduce AGE formation and preserve nutrients.

●     Gentle baking, with low temperatures and humidity (with a lid, in water): safer than intense browning.

Ancestrally speaking, people intuitively knew what science confirms today: soups, slow and moist cooking not only make food more digestible but also protect cellular health.

Recommendations for Healthy Cookware

When we think about cooking methods, we shouldn't just stop at temperature – the choice of cookware is essential to prevent the accumulation of toxins and mitochondrial damage:

What to use:

●     Pure natural cast iron: ideal for slow cooking, stewing, oven baking. It retains heat evenly and doesn't release toxins - CAST IRON COOKWARE

●     High-quality stainless steel: durable, safe, doesn't react with food, suitable for boiling, steaming, or sautéing - DISCOVER CRISTEL PRODUCTS

 What to avoid:

●     Teflon / PTFE / PFOA: these contain fluorinated compounds that become endocrine disruptors at high temperatures, affecting the thyroid and hormonal system.

●     Aluminum : reactive and potentially neurotoxic, associated with neuronal degeneration and systemic imbalances.

●     Poor quality enameled pots, often brightly colored and cheap, can chip easily, and through these exposed areas heavy metals can migrate into the food, especially in the presence of acidity or high temperatures.

●     Old or scratched cookware with unknown coating: can release heavy metals or toxic substances into food.

Therefore, how we cook is just as important as what we cook. And the pot in which you boil your soup can make the difference between healing and toxicity.

Practical Guide to Reducing AGEs

 - Choose moist methods: soups, stews, slow cooking or steaming. Cook at moderate temperatures: ≤ 100°C.

 - Marinate any animal protein in acidic environments:  lemon, vinegar, kefir, mustard, aromatic herbs.

 - Use stable fats: beef, goose, or duck fat, ghee ( DISCOVER GHEE HERE ( – more heat stable than vegetable oils.

 - Reduce frying or excessive browning: avoid burning and black crust.

We've been taught to focus on what we eat, but how we cook is just as vital. A piece of naturally raised chicken is a valuable food – but if you cook it improperly, it becomes a source of AGEs.

Instead, a meat soup (maximum 3 hours preparation for those with histamine intolerance or children) or bone broth extracts nutrients without generating glycemic or oxidative stress.

AGEs are a modern problem of fast and aggressive cooking styles.

To protect your mitochondria and cellular health, return to slow, moist, intuitive, and gentle cooking – just as our grandparents did. With the right cookware and correct methods, foods become medicine again.
